A forgiving dessert that lets the fruit do most of the work and welcomes whatever apples are in the bowl.

A small kitchen note: Read the method through once before starting, and taste as you go. Heat levels, produce, and personal preferences vary, so use the cues in the recipe as well as the clock.

Ingredients

  • 5 medium apples, peeled and sliced
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • 100 g rolled oats
  • 90 g plain flour
  • 80 g cold butter, cubed
  • 70 g brown sugar for topping
  • Pinch of salt

Method

  1. Heat the oven to 180°C (350°F). Toss the sliced apples with 2 tablespoons brown sugar, cinnamon, and lemon juice. Spread them in a lightly buttered baking dish.
  2. Put the oats, flour, topping sugar, and salt in a bowl. Rub in the cold butter with your fingertips until the mixture forms uneven crumbs, with a few larger pieces left for crunch.
  3. Scatter the topping over the apples without pressing it down. Bake for 30–35 minutes, until the fruit bubbles around the edges and the top is golden.
  4. Leave to rest for 10 minutes before serving. The filling will settle as it cools. Serve warm on its own or with plain yoghurt, custard, or vanilla ice cream.

Cooking times are estimates and depend on equipment and ingredient size. Follow safe food-handling practices and check doneness where appropriate.
